Glazed Apple Cinnamon Loaf Cake

Ingredients:

  • For the Cake:
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 2 cups all-purpose flour
    • 1 and 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 cup sour cream
    • 1 and 1/2 cups peeled and finely chopped apples (about 2 medium apples)
    • 1/2 cup chopped walnuts (optional)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
    • In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla extract.
    • In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually add the flour mixture to the creamed mixture, alternating with sour cream, beginning and ending with the flour mixture.
    • Fold in chopped apples and walnuts. Pour the batter into the prepared loaf pan.
    • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
  2. Prepare the Glaze:
    • In a small bowl, combine powdered sugar, milk, and vanilla extract. Stir until smooth.
    • Drizzle the glaze over the cooled loaf cake.
  3. Serve:
    • Slice and serve the glazed apple cinnamon loaf cake once the glaze has set.
